This title is a bit of an in–joke, which (IMHO) is not really very funny. If you want to know more, you can read about it here on Wikipedia.
Wikipedia gives the full title of the trilogy as the Three Flavours Cornetto trilogy. The Three Flavours element is also explained in the Wikipedia section linked above.
